This coffee from Ethiopia is a little different from others we’ve had in the past. Its flavor profile is less fruity and floral than most Ethiopian coffees. Instead, it is quite sweet, with notes of almond, toffee and cane sugar, while having a tea-like component. Like most Ethiopian coffees we keep the roast on the lighter side, opting for a light-medium level to highlight the natural flavors of the beans.
Shakiso is located in the Guji Zone, which is known for its ideal coffee growing conditions: high altitude terrain with volcanic soil and a semi-forested landscape offering natural shade. The Sawana Washing Station, at 6,000 to 7,200 ft elevation, is a prominent hub for processing Shakiso green coffee. The coffee cherries for this lot were sourced from smallholders in the community.
