This one's a stunner! With layers upon layers of flavors and aromas, this coffee from Yigacheffe, Ethiopia reveals its complexity slowly as its ground, brewed, sipped, and then sipped again as it cools down. Each stop along the way brings out new notes. We chose to go with a quick light-medium roast to allow the sweet lemony brightness to be augmented by a rich flavor of ripe blackberry without subduing its wonderful floral aroma reminiscent of honeysuckle and jasmine. There’s an almost bubble-gum sweetness to this coffee that balances out the brightness and makes this coffee downright fun.
